Goat’s Milk Caramel Sauce is made from the milk of healthy and happy goats raised on our farm. First we heat the goats milk to a simmer, add a pinch of baking soda (for the caramelization process), and then continually stir it over high heat until it reduces to a creamy, yet slightly tangy caramel sauce. No shortcuts! It takes several hours to make each batch of cajeta. Because the milk changes with the seasons, care must be taken to watch the milk as it reduces into the freshest form of caramel sauce. It's very challenging to make. Borgman's dairy is just one of a handful of dairies producing cajeta--and is the only grade A goat dairy in Kansas City manufacturing it!
